Cinnamon Roll Cookies

Delightful and easy-to-make cookies that capture the cozy flavors of traditional cinnamon rolls, enhanced with a creamy icing.

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the icing: 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the flour, brown sugar, cinnamon, baking soda, and salt. Stir well.
  3. In a large mixing bowl, beat the softened butter until creamy. Gradually add the dry mixture and mix until just combined.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Drop mounds of dough onto a parchment-lined baking sheet.
  6. Bake for 10-12 minutes until edges are lightly golden.
  7. Mix powdered sugar, milk, and vanilla in a small bowl for icing and drizzle over the cooled cookies.

Notes

For extra flavor, consider adding nutmeg or cardamom. These cookies can also be frozen for up to three months.
