Cozy Ground Beef Potato Casserole

A comforting dish that blends tender ground beef with creamy mashed potatoes, baked to golden perfection.

  • 1 pound ground beef
  • 4 large russet potatoes
  • 1 medium onion
  • 2 cups shredded cheddar cheese
  • 2 cups beef broth
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and chopped onion, cooking until the beef is browned and no longer pink, about 5-7 minutes.
  3. Stir in the garlic powder, salt, and pepper, allowing the flavors to meld together for another minute. Remove from heat.
  4. While the beef is cooking, peel and chop the potatoes into uniform cubes. Boil them in salted water until tender, approximately 15-20 minutes. Drain and return to the pot.
  5. Using a potato masher or a fork, mash the potatoes until smooth and creamy. You can add a splash of milk or a pat of butter.
  6. In a greased casserole dish, layer half the beef mixture, half the mashed potatoes, and half the cheese. Repeat with the remaining ingredients.
  7. Pour the beef broth over the casserole and cover it with aluminum foil. Bake for 30 minutes, then remove the foil and bake for an additional 15-20 minutes until the cheese is melted and bubbly.

Notes

For a lighter version, substitute ground beef with ground turkey or chicken. This casserole can be refrigerated for up to 3 days and can last in the freezer for up to three months.
