Cowboy Butter Lemon Bowtie Chicken with Broccoli

An easy, satisfying weeknight dinner combining tender chicken, bowtie pasta, and crisp broccoli in a bright lemon garlic butter sauce.

  • 12 oz bowtie pasta (farfalle)
  • 3 cups broccoli florets
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch chunks
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 6 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, snipped
  • 1/4 cup Parmesan cheese, freshly grated

Instructions

  1. Bring a large pot of generously salted water to a boil. Add the bowtie pasta and cook according to package directions. In the last 3 minutes of pasta cooking, add the broccoli florets. Before draining, reserve 1/2 cup of the pasta water, then drain the pasta and broccoli.
  2. Season the chicken chunks with salt and black pepper. Heat olive oil in a skillet over medium-high heat until shimmering. Add chicken in a single layer and sear for about 3 minutes. Flip and cook until the chicken reaches 165°F.
  3. Remove the cooked chicken from the skillet and set aside. Wipe the pan clean with a paper towel. Return skillet to medium heat and add unsalted butter, letting it melt.
  4. Add minced garlic to the melted butter and cook until fragrant, about 30-45 seconds.
  5. Stir in Dijon mustard, fresh lemon juice, lemon zest, smoked paprika, and red pepper flakes. Whisk the sauce until bubbly and slightly thickened.
  6. Return the drained pasta, broccoli, and seared chicken to the skillet. Toss everything together to coat in the sauce, adding reserved pasta water until desired consistency is reached.
  7. Stir in fresh parsley and chives. Taste and adjust salt and pepper as needed.
  8. Serve immediately with freshly grated Parmesan cheese on top.

Notes

To enhance flavor, let the chicken develop a golden crust before flipping. Use reserved pasta water to adjust sauce consistency.
