Cinnamon Swirl Cheesecake

A rich, creamy dessert with a silky cream cheese filling, warmly spiced cinnamon swirl, and buttery graham crust. Perfect for cool evenings and holiday dinners.

  • 1 and 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 5 tablespoons unsalted butter, melted
  • 32 ounces full-fat brick cream cheese, softened
  • 1 cup granulated sugar
  • 3/4 cup full-fat sour cream
  • 1 and 1/2 teaspoons vanilla extract
  • 3 large eggs, room temperature
  • 3/4 cup packed light or dark brown sugar
  • 1/2 cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 and 1/2 cups heavy cream
  • 2 tablespoons light or dark brown sugar
  • 1 teaspoon pure vanilla extract
  • Optional: ground cinnamon for garnish

Instructions

  1. Preheat the oven to 350°F (177°C) and adjust an oven rack to the lower-middle position.
  2. Combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter in a medium bowl. Press into the bottom of a 9-inch springform pan and pre-bake for 10 minutes.
  3. Beat the cream cheese and 1 cup granulated sugar until smooth. Add the sour cream and vanilla, mixing until combined, then add the eggs one at a time.
  4. Mix the brown sugar, flour, and cinnamon in a small bowl to prepare the cinnamon swirl.
  5. Pour one third of the cheesecake batter into the crust, sprinkle half of the cinnamon swirl mixture, add another third of the batter, the remaining swirl mixture, and lastly the final third of the batter. Gently swirl with a knife.
  6. Place the springform pan in a larger baking dish. Pour hot water into the outer pan to create a water bath.
  7. Bake for 65 to 85 minutes, until the edges are set. Let it cool in the oven with the door ajar for 1 hour.
  8. Chill in the refrigerator for at least 4 hours before serving.
  9. Whip heavy cream with brown sugar and vanilla until medium peaks form. Spread over the chilled cheesecake and dust with ground cinnamon if desired.

Notes

For best texture, ensure cream cheese and eggs are at room temperature. Store leftover cheesecake in the refrigerator for up to 4 days.
