  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ cup brown sugar, packed (for filling)
  • 2 tsp ground cinnamon (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon until well blended.
  3. In another bowl, cream the softened butter with the granulated sugar and packed brown sugar using a mixer until light and fluffy.
  4. Beat in the egg and vanilla extract until the mixture is smooth and well combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined. Be careful not to overmix the dough.
  6. Prepare the filling by combining the packed brown sugar and ground cinnamon in a small bowl.
  7. Place half of the cookie dough onto a sheet of parchment paper and use a spatula to spread it into a rectangle.
  8. Sprinkle the filling mixture evenly over the dough, then carefully roll up the dough tightly, using the parchment paper to assist.
  9. Slice the rolled dough into rounds about ½ inch thick and place them on a baking sheet lined with parchment paper.
  10. Bake for 10-12 minutes or until the cookies are golden brown. Allow them to cool slightly before serving.

Notes

For softer cookies, do not overbake. Store in an airtight container for up to a week. Experiment with additions like nuts or chocolate chips.
