Christmas Ribbon Salad

A festive three-layer gelatin dessert featuring bright flavors and colorful layers, perfect for holiday gatherings.

Ingredients

  • 6 ounces lime Jell-O powder, 2 1/4 cups hot water
  • 8 ounces block cream cheese, room temperature
  • 2 1/2 cups mini marshmallows
  • 1/2 cup pineapple juice
  • 3 ounces lemon Jell-O powder, 1 1/2 cups hot water
  • 6 ounces cherry Jell-O powder, 2 cups hot water

Instructions

  1. Prepare the first layer. In a heat-safe bowl, dissolve the lime Jell-O powder in hot water, stirring until fully dissolved. Pour the lime mixture into a baking dish and refrigerate until set, about 1 hour.
  2. Beat the cream cheese. While the lime layer chills, beat the cream cheese until it is light and fluffy. Set aside.
  3. Melt the marshmallows. In a small saucepan, combine the mini marshmallows and pineapple juice. Heat gently, stirring constantly, until melted and smooth. Remove from heat and let it cool slightly.
  4. Combine the lemon Jell-O and cream. Dissolve the lemon Jell-O powder in hot water. Pour it into the bowl with the cream cheese and add the slightly cooled marshmallow mixture. Stir until smooth.
  5. Chill the second layer. Let the mixture cool to lukewarm and pour it over the set lime layer. Refrigerate until firm, about 1 to 2 hours.
  6. Prepare the third layer. Dissolve the cherry Jell-O powder in hot water. Allow it to cool to room temperature before pouring over the chilled second layer.
  7. Final chill and serve. Chill until fully set, at least another 1 to 2 hours. Slice into squares and serve chilled.

Notes

For neat slices, run a sharp knife under hot water before cutting. Store covered in the refrigerator for up to 4 days.
