Chocolate Turtle Cake

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup chopped pecans
  • 1 cup chocolate chips
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Gradually add this dry mixture to the creamed mixture, alternating with the buttermilk.
  5. Gently fold in the chopped pecans and chocolate chips.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops.
  7. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  9. Once cooled, layer the cakes with caramel sauce in between, drizzle additional caramel on top, and sprinkle with more chopped pecans before serving.

Notes

Ensure your butter is at room temperature for easier creaming. Store leftover cake in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
