Chocolate Thumbprint Cookies

Chocolate Thumbprint Cookies are a delightful treat combining rich chocolate flavor with a melt-in-your-mouth texture, featuring a luscious chocolate ganache center.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder (Dutch process)
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla bean paste or extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream
  • Nonpareils for sprinkling on top (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, cocoa powder, salt, and baking powder until well combined.
  3. In a large bowl, beat the softened butter, light brown sugar, and granulated sugar together until creamy and smooth.
  4. Add the egg yolks and vanilla bean paste (or extract) to the butter mixture, and beat until fully combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined to form a soft dough.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Place on the prepared baking sheet, spacing them about 2 inches apart.
  7. Create an indentation in the center of each cookie using your thumb or the back of a teaspoon.
  8. Bake for 10 to 12 minutes, or until the edges are firm. Cool on the baking sheet for a few minutes before transferring to a wire rack.
  9. In a saucepan, heat the heavy whipping cream until just about to simmer, then stir in the semi-sweet chocolate chips until completely smooth to make the ganache.
  10. Once cookies have cooled, fill each thumbprint with chocolate ganache and sprinkle with nonpareils if desired.

Notes

Make sure that the butter is properly softened for easy mixing and store in an airtight container at room temperature for up to one week.
