Chocolate Mousse

A classic Chocolate Mousse featuring rich chocolate flavor and an airy texture, perfect for any dessert table.

  • 8 ounces semi-sweet chocolate, finely chopped
  • 2/3 cup heavy cream
  • 4 large egg whites
  • 1/2 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • Pinch of salt

Instructions

  1. Prepare the chocolate ganache. Place the finely chopped chocolate in a medium heatproof bowl. In a small saucepan over medium heat, warm the heavy cream until it just begins to simmer. Pour the hot cream over the chocolate, let it sit for 2 to 3 minutes, then stir until smooth. Let cool slightly so it is warm but not hot to the touch.
  2. Combine egg whites and sugar. In a clean heatproof bowl, combine the egg whites, granulated sugar, cream of tartar, and a pinch of salt. Set the bowl over simmering water, making sure the bottom of the bowl does not touch the water. Whisk continuously until the mixture is warm and the sugar has dissolved, about 4 minutes.
  3. Whip the meringue. Remove the bowl from the heat and transfer the mixture to a stand mixer or use a hand mixer. Whip on high speed until stiff, glossy peaks form and the meringue holds its shape.
  4. Fold ganache into the meringue. Start by folding a small scoop of the meringue into the warm ganache to lighten it. Then gently fold the ganache back into the remaining meringue in two additions, using a wide spatula and slow, sweeping motions to keep as much air as possible.
  5. Portion and chill. Spoon or pipe the finished mousse into serving dishes or glasses. Refrigerate for at least 4 hours to let the mousse set and the flavors meld.
  6. Serve. Optionally top with reserved chopped chocolate or extra shavings of the same semi-sweet chocolate before serving.

Notes

Ensure all bowls and beaters are spotless when whipping egg whites. Cool ganache slightly before folding.
