Chocolate Chip Cookie Cake

A warm, gooey twist on the classic chocolate chip cookie that slices like a cake and tastes heavenly.

  • 1 cup packed brown sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/2 cups semi-sweet chocolate chips
  • Optional: chocolate buttercream for topping

Instructions

  1. Preheat your oven to 350°F (177°C) and spray a 9-inch pie dish or cake pan with nonstick spray.
  2. Beat together the softened butter and brown sugar until creamy, about 1 to 2 minutes.
  3. Add the egg, egg yolk, and vanilla extract; mix until combined.
  4. Whisk together flour, cornstarch, baking soda, and salt in another bowl.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Fold in chocolate chips evenly.
  7. Press the dough into the prepared pan, ensuring an even surface.
  8. Bake for 22 to 26 minutes until golden brown.
  9. Allow to cool on a rack before serving.
  10. Optional: Frost with chocolate buttercream if desired.

Notes

For a chewier texture, do not overmix the dough. Store covered at room temperature for up to 2 days or refrigerate for 5 days.
