Chocolate Cake Pops

These chocolate cake pops are a nostalgic, bite-sized treat with deep chocolate flavor and a smooth, creamy coating. Ideal for parties, school events, or a special dessert.

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 6 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup canola oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup hot water
  • 6 tablespoons unsalted butter, softened
  • 3/4 cup confectioners’ sugar
  • 1/2 cup unsweetened cocoa powder (for frosting)
  • 23 teaspoons heavy cream or milk
  • 24 ounces candy melts or semi-sweet chocolate bars
  • Sprinkles (for decoration, optional)

Instructions

  1. Preheat the oven to 350°F (177°C) and grease a 9-inch pan.
  2. In a large bowl, whisk together the flour, sugar, 6 tablespoons cocoa powder, baking soda, and salt.
  3. In another bowl, whisk together the oil, eggs, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients, then add the 1/2 cup hot water and mix until smooth.
  5. Pour the batter into the prepared pan and bake for 25 to 27 minutes until a toothpick comes out clean.
  6. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, beat 6 tablespoons unsalted butter until creamy, then gradually add 3/4 cup confectioners’ sugar, 1/2 cup cocoa powder, and 2 to 3 teaspoons heavy cream or milk, beating until smooth.
  8. Crumble the cooled cake into a large bowl, mix in the frosting, and roll into small balls.
  9. Chill the balls in the refrigerator for 2 hours.
  10. Melt the candy melts or chocolate bars according to package instructions.
  11. Dip each cake ball in the coating, let excess drip off, and decorate with sprinkles.
  12. Allow to set before serving.

Notes

Use room temperature eggs and softened butter for a smoother batter and frosting. Store finished cake pops in an airtight container in the refrigerator for up to 5 days.
