Chewy Sugar Cookies

Deliciously soft and chewy sugar cookies that offer a sweet, buttery taste reminiscent of childhood memories.

Ingredients

  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/3 cups white sugar
  • 1/3 cup for rolling
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two cookie sheets by lining them with parchment paper.
  2. In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt until well combined.
  3. In a large mixing bowl, beat the softened butter and 1 1/4 cups of sugar together until the mixture is light and fluffy.
  4. Add the egg, egg yolk, and both the vanilla and almond extracts, mixing until fully combined.
  5. Gradually add the flour mixture to the butter mixture, stirring until the dough is uniformly mixed.
  6. Form the dough into balls, approximately 1 tablespoon in size, and roll in the remaining 1/3 cup of sugar. Place on the cookie sheets, about 2 inches apart.
  7. Bake in the preheated oven for 8 to 10 minutes, or until the tops are just set but still soft.
  8. Allow to cool on the baking sheet for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For uniform cookies, use a cookie scoop to measure out your dough balls. Store in an airtight container.
