Chewy Sugar Cookies

  • 1 cup butter, softened
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup granulated sugar for dipping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and 1 1/4 cups of granulated sugar until light and fluffy, about 1 minute.
  3. Add in the egg, vanilla extract, and almond extract if using. Beat until the mixture is well combined and creamy.
  4. Gradually incorporate the flour, baking soda, baking powder, and salt into the wet mixture, mixing until just combined. Be sure to scrape down the sides of the bowl as needed.
  5. Roll the dough into 1-inch balls and coat each ball in the remaining 1/4 cup of granulated sugar.
  6. Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-11 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For added flavor, consider chilling the dough for about 30 minutes before baking. Store cookies in an airtight container for up to 1 week. You can freeze cookie dough balls before baking for later use.
