Cherry Pie Filling

Capture the essence of summer with this sweet-tart cherry pie filling, perfect for pies and desserts.

Ingredients

  • ¼ cup cornstarch
  • ½ cup sugar
  • 4 cups fresh or frozen cherries
  • ½ cup water
  • 1 tablespoon fresh lemon juice

Instructions

  1. Combine the cornstarch and sugar in a medium saucepan, stirring until smooth to eliminate any lumps.
  2. Pour in the water, then add the cherries and lemon juice. Mix everything until well combined.
  3. Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring frequently to prevent sticking.
  4. Once boiling, reduce the heat and let it simmer for about 2 to 4 minutes. Continue to stir often until the filling thickens to your desired consistency.
  5. Remove the saucepan from heat and let the cherry filling cool.
  6. Transfer the filling to a storage container. It can be stored in the refrigerator for up to a week.

Notes

Taste the filling before removing from heat to adjust sweetness if necessary. This filling can be frozen for up to 3 months.
