Pizza Grilled Cheese

A comforting grilled cheese sandwich that merges classic pizza flavors with gooey mozzarella and savory pepperoni.

  • ½ cup unsalted butter, very soft
  • 1 tablespoon grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon dried Italian seasoning
  • 8 slices white bread
  • 12 slices mozzarella cheese
  • 6 ounces pepperoni
  • Warm pizza sauce for dipping

Instructions

  1. Combine the softened butter, grated Parmesan cheese, garlic powder, and Italian seasoning in a medium-sized bowl and mix until smooth.
  2. Spread the butter mixture evenly over one side of each slice of bread. Arrange the slices butter side up on a sheet tray.
  3. Heat a skillet over medium-low heat and place one slice of bread, butter side down, in the skillet.
  4. Layer with one slice of mozzarella cheese, followed by 6 slices of pepperoni, another slice of mozzarella, and then 6 more slices of pepperoni. Top with a final slice of mozzarella cheese.
  5. Cover with another slice of bread, butter side up. Cook until golden brown, about 3-5 minutes.
  6. Carefully flip the sandwich and cook the other side until golden brown and cheese is fully melted, about another 3-5 minutes.
  7. Remove from the skillet and repeat with remaining ingredients to make additional sandwiches.
  8. Serve the Pizza Grilled Cheese immediately with warm pizza sauce for dipping.

Notes

Use a cast-iron skillet for even heat distribution. Leftover sandwiches can be wrapped in foil and stored in the refrigerator for up to 2 days. For freezing, assemble the sandwiches without cooking, wrap them tightly in plastic, and use a freezer bag.
