Cheesy Garlic Butter Chicken Bowtie with Mozzarella Cream Sauce

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 4 tbsp butter, divided
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1 lb bowtie pasta
  • 4 cups heavy cream
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese, plus more for topping
  • 1/2 cup grated Parmesan cheese
  • Salt to taste

Instructions

  1. Bring a large pot of salted water to a rolling boil, add the bowtie pasta, and cook until al dente according to package directions. Drain and set aside.
  2. In a large skillet over medium heat, warm olive oil and 2 tbsp butter until melted and foamy.
  3. Add chicken pieces to the skillet, season with Cajun seasoning, smoked paprika, black pepper, and salt. Cook for 6 to 8 minutes until browned and cooked through. Remove chicken and set aside.
  4. Lower heat slightly, add remaining butter to the skillet, and sauté minced garlic for about 1 minute until fragrant.
  5. Reduce heat to low, pour in heavy cream, and stir until it simmers gently.
  6. Whisk in cream cheese until smooth, then add mozzarella and Parmesan, stirring until melted and silky.
  7. Return cooked chicken and drained pasta to the skillet, tossing gently to coat with sauce. Adjust consistency with reserved pasta water if needed.
  8. Serve warm with extra mozzarella on top if desired. Enjoy!

Notes

Cut chicken into even pieces for uniform cooking. For a crispy top, broil with extra cheese briefly.
