Caramel Pecan Cheesecake

Warm, creamy, and indulgently rich, this Caramel Pecan Cheesecake is the ultimate dessert for special occasions, featuring a crisp Oreo crust, silky cream cheese filling, and swirls of caramel topped with toasted pecans.

  • 22 regular Oreo cookies, crushed
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup chopped pecan halves or chocolate chips
  • 32 ounces full-fat cream cheese, softened
  • 1 cup brown sugar
  • 1 cup full-fat sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice (optional)
  • 3 large eggs
  • 1/4 cup caramel sauce
  • 4 ounces semi-sweet chocolate, chopped
  • 1/4 cup caramel sauce for topping
  • Flaky sea salt (optional)

Instructions

  1. Preheat the oven to 350°F (177°C) and wrap a 9-inch springform pan with aluminum foil.
  2. Combine crushed Oreo cookies with melted butter and press into the bottom of the prepared pan. Pre-bake the crust for 10 minutes.
  3. Beat cream cheese and brown sugar until smooth. Mix in sour cream, vanilla, and lemon juice if using. Add eggs one at a time, mixing until combined.
  4. Pour half of the batter into the crust, drizzle with 1/4 cup caramel sauce, and gently swirl. Add the remaining batter and smooth the top.
  5. Place the springform pan in a larger roasting pan and fill the roasting pan with hot water to create a water bath. Bake for 55 to 70 minutes until the center is slightly wobbly.
  6. Gradually cool in the oven with the door slightly open for 1 hour, then cool to room temperature before refrigerating.
  7. Refrigerate for at least 4 hours. Melt chocolate and drizzle over the cheesecake, topping with pecans and additional caramel sauce. Optionally sprinkle with flaky sea salt before serving.

Notes

For extra flavor, toast the pecans before adding them as a topping. Refrigerate covered for up to 4 days or freeze for up to 1 month.
