Butter Pecan Cake

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup buttermilk
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan or line it with parchment paper.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, whisking thoroughly after each addition, then add the vanilla extract.
  5. In a separate bowl, sift together the flour and a pinch of salt. Gradually add this to the wet mixture, alternating with the buttermilk, mixing just until combined.
  6. Gently fold in the chopped pecans.
  7. Pour the batter into the prepared pan and spread evenly. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
