Buckeyes (Peanut Butter Balls)

  • 1 ½ cups creamy peanut butter
  • ½ cup butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 16 ounces semi-sweet chocolate chips
  • ¼ cup shaved paraffin wax

Instructions

  1. Beat together the creamy peanut butter and softened butter using an electric mixer until well-blended and smooth.
  2. Stir in the vanilla extract, mixing until combined seamlessly with the peanut butter mixture.
  3. Gradually add the powdered sugar, blending it in until the mixture becomes smooth and fluffy.
  4. Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
  5. Chill the balls in the freezer for 60 minutes to firm them up, making them easier to dip.
  6. While the peanut butter balls chill, melt the semi-sweet chocolate chips and shaved paraffin wax together in a microwave or a double boiler until completely smooth.
  7. Once the balls are chilled, dip each one into the melted chocolate mixture, allowing any excess to drip off before placing them on a sheet of wax paper to set.
  8. Let the chocolate coating harden completely before serving, which may take around 30 minutes.

Notes

Ensure butter is softened at room temperature for easier mixing. Store in an airtight container in the refrigerator for up to one week, or freeze for up to three months.
