Brown Sugar Pop Tart Cookies

A delightful blend of Pop Tart nostalgia and cookie chewiness, these Brown Sugar Pop Tart Cookies are filled with your favorite jam for a customizable treat.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 ½ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ cup of your favorite jam (raspberry, strawberry, or apricot)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and brown sugar in a large mixing bowl until light and fluffy.
  3. Beat in the eggs one at a time followed by the vanilla extract.
  4. In a separate bowl, whisk together the flour, salt, baking soda, and cinnamon.
  5. Gradually add the dry mixture to the creamed butter mixture, stirring until just combined.
  6. Chill the dough for 15-30 minutes (optional).
  7. Scoop a tablespoon of dough, flatten it, place a small dollop of jam in the center, and fold the edges around the jam.
  8. Roll into a ball and place on a lined baking sheet.
  9. Bake for 15-20 minutes or until golden around the edges.
  10. Allow to cool slightly before serving.

Notes

Try using half whole wheat flour for added nutrition or chocolate hazelnut spread for a gooey filling.
