  • 3/4 cup light brown sugar (packed, for filling)
  • 1 teaspoon cinnamon (for filling)
  • 2 tablespoons cake flour (for filling)
  • 1 cup powdered sugar (for icing)
  • 1/2 teaspoon cinnamon (for icing)
  • 3 tablespoons unsalted butter (melted and cooled, for icing)
  • 2 1/2 tablespoons milk (for icing)

Instructions

  1. In a stand mixer bowl, combine butter, granulated sugar, and light brown sugar. Beat until creamy.
  2. Add eggs and vanilla to the butter mixture, beating until light and fluffy.
  3. In a separate bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and kosher salt.
  4. Gradually mix the dry ingredients into the wet mixture until combined. Chill the dough for 1 hour.
  5. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  6. In another bowl, stir together softened butter, light brown sugar, cinnamon, and cake flour for the filling.
  7. Roll filling into small balls and set aside.
  8. Scoop out portions of dough, create a well in each, and place a filling ball inside, sealing securely.
  9. Arrange cookies on baking sheets and bake for 11-13 minutes until lightly golden.
  10. Cool completely on a wire rack before icing.
  11. For the icing, whisk together powdered sugar, cinnamon, melted butter, and milk until smooth. Spoon over cooled cookies.
