Brown Sugar Pecan Cheesecake

A rich and creamy cheesecake topped with warm, nutty pecans and a glossy brown sugar caramel, perfect for holiday gatherings and celebrations.

  • 2 cups graham cracker crumbs
  • 6 tablespoons granulated sugar
  • 1/2 cup unsalted butter, melted
  • 32 ounces full-fat brick cream cheese, softened
  • 1 cup packed light or dark brown sugar
  • 1 cup full-fat sour cream, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon ground cinnamon
  • 3 large eggs, at room temperature
  • 1 and 1/2 cups pecan halves
  • 1/4 cup unsalted butter (for the pecan topping)
  • 1/2 cup packed light or dark brown sugar (for the pecan topping)
  • 6 tablespoons heavy cream
  • Pinch of salt
  • 1 tablespoon light corn syrup

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. Combine the graham cracker crumbs, 6 tablespoons granulated sugar, and 1/2 cup melted butter in a medium bowl, mixing until moistened.
  3. Press the mixture into a springform pan to form a crust, and pre-bake for 10 minutes. Set aside to cool.
  4. Beat the softened cream cheese and brown sugar in a large bowl until smooth and creamy.
  5. Add the sour cream, vanilla, lemon juice, and cinnamon to the cream cheese mixture and mix until silky.
  6. Add the eggs one at a time, mixing gently. Pour the mixture into the pre-baked crust.
  7. Prepare a water bath and place the springform pan in a larger baking dish filled with hot water.
  8. Bake the cheesecake for 55 to 70 minutes, until slightly jiggly in the center.
  9. Cool the cheesecake in the oven for 1 hour, then refrigerate for at least 4 hours to set.
  10. Toast the pecans in the oven at 300°F (150°C) for 8 to 10 minutes.
  11. Combine butter, brown sugar, heavy cream, salt, and corn syrup in a saucepan and simmer until thickened.
  12. Stir in the toasted pecans and cool before using.
  13. Pour the pecan topping over the chilled cheesecake, slice, and serve.

Notes

For a firmer slice, chill overnight. For a softer bite, chill at least 4 hours.
