Blueberry Pie Bars

Delicious Blueberry Pie Bars with a buttery oat crust and juicy blueberry filling, perfect for any occasion.

Ingredients

Scale
  • 1 and 1/2 cups all-purpose flour
  • 1 cup old-fashioned whole rolled oats
  • 1/2 cup packed light or dark brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon lemon zest
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 10 Tablespoons unsalted butter, melted
  • 4 and 1/2 cups blueberries
  • 1/2 cup granulated sugar
  • 2 Tablespoons cornstarch
  • 1 Tablespoon lemon juice
  • 2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9-inch square pan with parchment paper for easy removal.
  2. Whisk together the flour, oats, brown sugar, baking powder, lemon zest, cinnamon, and salt until well combined.
  3. Pour the melted butter into the dry ingredients and mix until the mixture becomes crumbly.
  4. Press about 2/3 of the crumbly mixture into the bottom of the prepared pan to form the crust. Bake the crust for 10 minutes, then remove it from the oven.
  5. Combine the blueberries, granulated sugar, cornstarch, and lemon juice in a medium saucepan over medium heat. Stir gently until the mixture thickens, about 5-7 minutes.
  6. Pour the blueberry filling evenly over the par-baked crust.
  7. Sprinkle the remaining crumbly mixture on top of the blueberry filling.
  8. Return the pan to the oven and bake for an additional 45-55 minutes, or until the filling is set and the top is lightly golden.
  9. Allow the bars to cool completely before lifting them out and cutting them into squares.
