Blueberry Crumble Bars

A delightful dessert that combines a buttery, crumbly base with juicy blueberries, topped with a crispy oat crumble.

  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup quick oats
  • 1 egg yolk (room temperature)
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup white sugar (for filling)
  • 3 tbsp lemon juice
  • 2 cups frozen blueberries (or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper for easy removal.
  2. Combine brown sugar, white sugar, all-purpose flour, and quick oats in a large mixing bowl. Stir until well mixed.
  3. Add the egg yolk and melted butter into the mixture, mixing until crumbly.
  4. Press about two-thirds of the mixture firmly into the bottom of the prepared baking pan and set the remaining dough aside.
  5. Gently combine the blueberries with 1/2 cup of white sugar and lemon juice in another bowl. Spread evenly over the crust in the pan.
  6. Sprinkle the reserved crumble mixture generously on top of the blueberries.
  7. Bake for 30 to 35 minutes, or until the topping is golden brown and the blueberries are bubbly.
  8. Allow the bars to cool in the pan before slicing into squares or rectangles.

Notes

For better flavor, consider adding a dash of cinnamon to the filling mixture. Store leftovers covered at room temperature for up to 3 days or refrigerate for up to a week. These bars freeze well for up to 3 months.
