Blueberry Crumble Bars

Delightful Blueberry Crumble Bars with a buttery crumble topping and a sweet, tangy blueberry filling.

  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup quick oats
  • 1 egg yolk (room temperature)
  • 1/2 cup unsalted butter (melted)
  • 3 tbsp lemon juice
  • 2 cups frozen blueberries (or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper for easy removal.
  2. Combine the brown sugar, white sugar, flour, and oats in a large mixing bowl. Stir until well mixed.
  3. Add the egg yolk and melted butter to the dry ingredients. Mix until the mixture becomes crumbly.
  4. Reserve 1 cup of the crumble mixture for topping, then press the remaining mixture into the bottom of the prepared pan.
  5. Combine the blueberries, white sugar, and lemon juice in a separate bowl. Gently stir to coat the blueberries evenly.
  6. Spoon the blueberry mixture over the pressed base and spread it evenly.
  7. Sprinkle the reserved crumble topping over the blueberries to create a nice layer.
  8. Bake for 30-35 minutes or until the topping turns golden brown and the filling bubbles.
  9. Allow the bars to cool in the pan on a wire rack. Once cool, lift them out using the parchment paper and cut into squares.

Notes

For a fun twist, try mixing in some chopped nuts or swapping the blueberries for raspberries or strawberries. Store in an airtight container for up to a week.
