Blackberry Velvet Gothic Cake

A delightful dessert combining rich chocolate cake and tangy blackberries for a beautifully balanced flavor.

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups sugar
  • ¾ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 1 cup pureed blackberries
  • 1 tsp vanilla extract
  • Buttercream frosting (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter and dust with flour.
  3. In a mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  4. In another bowl, mix eggs, buttermilk, vegetable oil, pureed blackberries, and vanilla until smooth.
  5. Combine the wet and dry ingredients by pouring the wet mixture into the dry, stirring until just combined.
  6. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Cool for 10 minutes before transferring to a wire rack and frost with buttercream once cooled.

Notes

For an extra touch, add fresh blackberries on top of the frosting.
