Ingredients

Scale
  • 2 cups whole wheat flour
  • 2/3 cup old-fashioned whole rolled oats
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 and 1/3 cups unsweetened applesauce
  • 2 large eggs
  • 1/3 cup coconut oil (melted), vegetable oil, or melted butter
  • 1/3 cup pure maple syrup
  • 1/3 cup milk (dairy or nondairy)
  • 1 teaspoon pure vanilla extract
  • 3/4 cup raisins
  • Optional: 3 tablespoons oats and/or 1 tablespoon coarse sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. In a large bowl, whisk together the whole wheat flour, oats, ground cinnamon, baking soda, baking powder, and salt until uniform.
  3. In a separate bowl, mix the unsweetened applesauce, eggs, melted coconut oil (or your choice of fat), maple syrup, milk, and vanilla extract. Stir until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  5. Fold in the raisins until they are evenly distributed throughout the batter.
  6. Spoon the batter into the prepared muffin liners, filling each about 3/4 full.
  7. Bake in the preheated oven for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool for a few minutes in the pan before transferring them to a wire rack to cool completely.
