Apple Oatmeal Cookies with Maple Icing

  • 2/3 cup unsweetened applesauce
  • 2 cups old-fashioned whole rolled oats
  • 1 and 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light or dark brown sugar
  • 1 egg yolk
  • 1 teaspoon pure vanilla extract
  • 3/4 cup finely diced apples
  • 1/2 cup chopped walnuts (optional)
  • 2 tablespoons unsalted butter (for icing)
  • 1/3 cup pure maple syrup
  • 1 cup sifted confectioners’ sugar
  • Pinch of salt (for icing)

Instructions

  1. Reduce the applesauce. Place the applesauce in a saucepan over medium heat, bring to a low boil, and simmer until reduced by half, about 10 minutes. Remove from heat and let cool.
  2. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  3. Combine the dry ingredients. In a large bowl, whisk together the oats, flour, baking soda, salt, cinnamon, allspice, and nutmeg until evenly combined.
  4. Cream the butter and sugars. In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 5 minutes.
  5. Add wet ingredients to the creamed mixture. Add the cooled reduced applesauce, egg yolk, and vanilla to the creamed mixture; mix until fully combined.
  6. Mix dry into wet. Gradually mix the dry ingredients into the wet mixture until just combined. Do not overmix.
  7. Fold in apples and nuts. Gently fold in the diced apples and chopped walnuts, if using. Chill the dough if it feels too loose.
  8. Scoop cookie dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 14 to 16 minutes, or until the cookies are lightly browned.
  9. Cool briefly on the sheet. Allow cookies to cool on the baking sheet for 10 minutes before transferring them to a cooling rack.
  10. Make the maple icing. For the icing, melt the butter and maple syrup in a saucepan over low heat. Whisk in the sifted confectioners’ sugar and a pinch of salt to taste.
  11. Finish and set. Drizzle the icing over cooled cookies and allow it to set before serving. Store cookies in an airtight container.

Notes

Store cooled cookies in an airtight container at room temperature for up to 3 days. For longer storage, place in the refrigerator for up to 1 week. Freeze baked, un-iced cookies for up to 3 months.
