Apple Bundt Cake

A comforting Apple Bundt Cake with tender crumb, juicy apple pieces, and aromatic spices topped with a luscious caramel glaze.

  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 3 cups Granny Smith apples (peeled and diced)
  • ½ cup unsalted butter (for caramel glaze)
  • ½ cup heavy cream (for caramel glaze)
  • 1 cup light brown sugar (packed, for caramel glaze)
  • Pinch of salt (for caramel glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a 10-cup bundt pan.
  2. In a large mixing bowl, combine granulated sugar, vegetable oil, 1 teaspoon of vanilla extract, and eggs. Whisk until smooth.
  3. In a separate bowl, mix together flour, baking soda, ground cinnamon, and salt.
  4. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  5. Gently fold in the diced apples.
  6. Pour the batter into the bundt pan and bake for 55-65 minutes, or until a toothpick comes out clean.
  7. Cool for 15 minutes then transfer to a wire rack.
  8. For the caramel glaze, melt butter, then stir in heavy cream, brown sugar, and a pinch of salt. Bring to a gentle boil, then simmer for 3-4 minutes. Stir in remaining vanilla extract.
  9. Pour the caramel glaze over the cooled cake and serve warm or at room temperature.

Notes

Ensure apples are finely diced for even distribution. Store leftovers in an airtight container for up to 3 days.
