Zesty Peri Peri Chicken

A flavorful and spicy chicken dish marinated in peri peri sauce, garlic, and citrus, perfect for weeknight dinners or gatherings.

  • 1/4 cup olive oil
  • 3 tablespoons peri peri sauce
  • 4 cloves garlic, minced
  • Juice of 2 lemons
  • 1 tablespoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the marinade: In a mixing bowl, combine olive oil, peri peri sauce, minced garlic, lemon juice, smoked paprika, salt, and pepper. Whisk until well combined.
  2. Marinate the chicken: Place chicken pieces in a large zip-lock bag or bowl, pour the marinade over, ensuring an even coat. Seal and refrigerate for at least 30 minutes.
  3. Preheat your cooking method: Preheat the oven to 400°F (200°C) or air fryer to 375°F (190°C).
  4. Cook the chicken: Bake for 35-40 minutes or air fry for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  5. Rest and serve: Let the chicken rest for 5-10 minutes before serving. Enjoy with your choice of sides.

Notes

Adjust the peri peri sauce quantity based on your heat preference. Store leftovers in an airtight container for up to 3 days.
