Warm and Comforting Caramel Banana Bread Cookies

Soft and chewy cookies combining the rich flavors of caramel and banana. Perfect for dessert or an afternoon snack.

  • 2 ripe bananas
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chocolate chips (optional)
  • Caramel sauce for drizzling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Cream together the softened butter and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, mixing until well combined.
  5. Whisk together flour and baking soda in another bowl. Gradually add this to the wet mixture until just combined.
  6. Fold in chocolate chips or any desired add-ins.
  7. Scoop tablespoon-sized amounts of dough onto the baking sheet, spacing them 2 inches apart.
  8. Bake for 10-12 minutes or until edges are golden and centers are set but still soft. Drizzle caramel sauce on warm cookies.

Notes

Enjoy warm with vanilla ice cream or coffee. Dough can be frozen for later baking.
