Warm Cinnamon Sugar Apple Loaf

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, sift together the flour, baking soda, baking powder, cinnamon, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition, and then add the vanilla extract.
  5. Gradually mix in the dry ingredients until just combined, being careful not to overmix.
  6. Gently fold in the diced apples.
  7. Pour the batter into a greased 9×5-inch loaf pan and sprinkle the optional brown sugar on top.
  8. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Store the loaf tightly wrapped at room temperature for up to 4 days or refrigerate for up to a week. Can also be frozen for up to three months.
