Cozy Vegetarian Soup with Peas

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups vegetable broth
  • 4 cups fresh or frozen peas
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté for about 3-4 minutes until they become translucent. Add the minced garlic and sauté for an additional minute.
  2. Stir in the diced carrots and celery, cooking for about 5-7 minutes until they soften slightly.
  3. Add the vegetable broth to the pot and bring to a gentle boil.
  4. Once boiling, add the peas and dried thyme. Let it simmer for another 5-7 minutes.
  5. Add salt and pepper to taste. Adjust according to preference.
  6. For a creamier texture, use an immersion blender to puree a portion or all of the soup.
  7. Ladle the hot soup into bowls and serve immediately, garnished with fresh herbs or a drizzle of olive oil.

Notes

For best results, do not overcook the peas to retain their vibrant color and tenderness.
