A delightful fusion of meringue and sponge-like cake, these Ultra-Soft Raspberry Christmas Snow Clouds are fluffy pastries bursting with raspberry flavor, perfect for festive gatherings.

  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 1/4 teaspoon cream of tartar
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper.
  2. In a mixing bowl, beat the egg whites and cream of tartar until soft peaks form (about 3-5 minutes).
  3. Gradually add the granulated sugar, one tablespoon at a time, beating until glossy and stiff peaks form (about 5-7 minutes).
  4. Gently fold in the vanilla extract and fresh raspberries without breaking them up.
  5. Spoon dollops of the mixture onto the prepared baking sheet, ensuring space between each cloud.
  6. Bake for about 20-25 minutes, until firm to the touch and lightly golden at the base.
  7. Allow to cool for at least 10 minutes on the baking sheet before transferring to a wire rack.

Notes

Store leftovers in an airtight container at room temperature for up to three days. For longer storage, freeze individually and store in a freezer-safe container for up to one month.
