Tiramisu

A classic Italian dessert that balances bold coffee flavor with luxuriously creamy mascarpone, perfect for any special occasion.

  • 1 cup very strongly prepared espresso, warm or room temperature
  • 5 tablespoons Grand Marnier (optional)
  • 4045 ladyfingers
  • 16 ounces mascarpone, cold
  • 2 tablespoons dark rum
  • 4 large pasteurized eggs, separated
  • 1/2 cup granulated sugar, divided
  • 2 cups heavy cream or heavy whipping cream
  • 1/2 teaspoon pure vanilla extract
  • 1/8 teaspoon salt
  • Unsweetened natural or Dutch-process cocoa powder for dusting

Instructions

  1. Prepare a large 9×13-inch baking pan and set it aside. Line with parchment if preferred.
  2. Whisk together the espresso and Grand Marnier in a shallow bowl. Ensure the espresso is warm.
  3. Dip each ladyfinger into the espresso mixture quickly, arranging them in the baking pan to form a solid layer.
  4. Combine the cold mascarpone and dark rum in a mixing bowl, mixing on medium speed until smooth.
  5. Whisk the egg yolks with 1/4 cup of the sugar over a double boiler until foamy, then fold into the mascarpone mixture.
  6. Whip the heavy cream with the vanilla extract until medium peaks form, then gently fold into the mascarpone mixture.
  7. Beat the egg whites and salt until foamy. Gradually add the remaining sugar, beating until stiff peaks form, then fold into the mascarpone mixture.
  8. Spread half of the mascarpone cream over the ladyfinger layer using an offset spatula.
  9. Layer the remaining ladyfingers dipped in the espresso mixture on top, then spread the remaining cream.
  10. Refrigerate uncovered for 2 to 3 hours, then sift cocoa powder over the top, cover, and refrigerate for at least 8 to 9 hours.
  11. Slice and serve chilled, storing leftovers in the refrigerator for up to 3 days.

Notes

Keep the mascarpone cold and dip ladyfingers quickly to avoid a soggy base. Use pasteurized eggs for safety.
