Texas Cowboy Cookies are the perfect blend of rich flavors and delightful textures, making them a family favorite with chocolate chips, oats, and nuts.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups rolled oats
  • 1 cup chocolate chips
  • 1/2 cup chopped nuts (walnuts or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and sugars in a large mixing bowl until light and fluffy, about 2-3 minutes.
  3. Add the eggs, one at a time, followed by the vanilla extract, beating well after each addition.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients until combined.
  5. Stir in the oats, chocolate chips, and nuts until evenly distributed.
  6. Scoop tablespoon-sized portions of dough onto a lined baking sheet, spacing them about two inches apart.
  7. Bake for 12-15 minutes or until edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a twist, try using brown butter or add a teaspoon of cinnamon for added flavor.
