Strawberry Cheesecake Reeses

A delicious twist on classic cheesecake, featuring creamy layers accented with fresh strawberries and crunchy Reese’s peanut butter cups.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese (2 packages, 8 oz each)
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 cup peanut butter cups, chopped
  • 1 cup strawberries, pureed
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the crust by mixing graham cracker crumbs and melted butter. Press into a baking dish and bake at 350°F (175°C) for 10 minutes. Cool slightly.
  2. Beat the cream cheese with granulated sugar until smooth. Add eggs one at a time, mixing well. Incorporate vanilla extract.
  3. Fold in the chopped peanut butter cups and strawberry puree until swirled.
  4. Pour the cheesecake filling over the cooled crust and smooth the top.
  5. Bake for 40-45 minutes until the edges are set and the center jiggles slightly.
  6. Cool in the oven with the door cracked for 1 hour. Refrigerate for at least 4 hours, ideally overnight, to set.
  7. Slice into squares and serve cold.

Notes

For best results, do not overmix after adding eggs to avoid cracks. Decorate with fresh berries or whipped cream before serving.
