Spicy Salmon Sushi Bake

A comforting twist on traditional sushi, this Spicy Salmon Sushi Bake combines seasoned sushi rice, fresh salmon, and a zesty mayo blend, all baked to perfection.

Ingredients

  • 2 cups sushi rice
  • 2 1/4 cups water
  • 1 lb fresh salmon fillet
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Chopped green onions
  • Sesame seeds (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Cook in a rice cooker with 2 1/4 cups of water according to manufacturer’s instructions.
  2. Preheat your oven to 375°F (190°C) and place the salmon in a baking dish, drizzle with soy sauce, and bake for about 15 minutes.
  3. In a bowl, mix the mayonnaise, sriracha, sesame oil, and salt to create the spicy mayo.
  4. Once the salmon is cooked, flake it into pieces and mix the cooked sushi rice with half of the spicy mayo and half of the green onions.
  5. Spread the sushi rice mixture in the bottom of the baking dish, top with flaked salmon, and drizzle with remaining spicy mayo.
  6. Bake for an additional 15-20 minutes or until the top is golden and crispy.
  7. Garnish with remaining green onions and sesame seeds before serving.

Notes

You can substitute salmon with tuna or shrimp, and adjust the spice level to your preference.
