Spicy Salmon Sushi Bake

A warm, inviting dish that combines sushi flavors in a delightful bake, perfect for family gatherings or intimate dinners.

  • 2 cups sushi rice
  • 2 cups water
  • 8 oz. fresh salmon (sashimi grade)
  • 1 avocado
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 2 green onions
  • 1 tablespoon furikake

Instructions

  1. Rinse the sushi rice until the water runs clear, then cook it in a pot with 2 cups of water, bringing it to a boil. Reduce heat, cover, and simmer for 18 minutes, then let sit for 10 minutes.
  2. Preheat your oven to 350°F (175°C).
  3. Dice salmon into small cubes and mix with mayonnaise and sriracha.
  4. Spread the cooked rice evenly in a greased 9×9-inch baking dish, then layer the salmon mixture on top.
  5. Bake for 25 minutes until the salmon is cooked and slightly golden.
  6. Top with sliced avocado, chopped green onions, and furikake.
  7. Serve in bowls and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to three days. Best reheated in the oven to maintain texture.
