Spanish Churro-Inspired Pancakes

Fluffy pancakes inspired by traditional Spanish churros, with a golden-brown exterior and dusted with cinnamon sugar.

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/4 cup granulated sugar mixed with 2 teaspoons cinnamon (for serving)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, ground cinnamon, and cinnamon sugar.
  2. In another bowl, whisk the milk, egg, and melted butter together. Pour this into the dry ingredients and stir gently until just combined.
  3. Preheat a non-stick skillet or griddle over medium heat.
  4. Pour about 1/4 cup of the batter onto the skillet. Cook for 2-3 minutes until bubbles form and edges are set. Flip and cook for another 2 minutes until golden brown.
  5. Dust immediately with cinnamon sugar while warm.
  6. Serve stacked, drizzled with chocolate sauce or maple syrup, and enjoy!

Notes

Leftover pancakes can be stored in an airtight container for up to three days in the refrigerator.
