Southern Pecan Pie Bites

Delightful bite-sized treats that encapsulate the flavors of classic pecan pie with a sweet, gooey center and a flaky crust.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1 cup pecans, chopped
  • 1/2 cup brown sugar
  • 1/2 cup corn syrup
  • 1 tsp vanilla extract
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. Mix together flour, butter, sugar, and salt until crumbly.
  3. Roll out the dough and cut into 2-inch circles, fitting each into muffin tin wells.
  4. In another bowl, whisk together pecans, brown sugar, corn syrup, vanilla extract, and eggs.
  5. Pour the filling into each crust until about 3/4 full.
  6. Bake for 20-25 minutes or until golden brown and slightly puffed.
  7. Let cool for 10 minutes before transferring to a wire rack.

Notes

Store in an airtight container in the refrigerator for up to a week. They freeze well for longer storage.
