Southern Pecan Pie Bites

Delightful bite-sized treats combining a flaky crust with a rich, gooey, pecan-studded filling, perfect for any occasion.

  • 1 cup pecans, chopped
  • 1 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • Mini pastry shells

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a muffin tin with butter or non-stick spray.
  3. In a large bowl, combine the chopped pecans, brown sugar, melted butter, eggs, vanilla extract, and salt. Mix until well incorporated.
  4. Place mini pastry shells into the greased muffin tin and fill each shell with the pecan mixture, about three-quarters full.
  5. Bake for 20-25 minutes until edges are browned and filling is set but slightly jiggles in the center.
  6. Cool in the muffin tin for 10 minutes, then remove and cool on a wire rack.
  7. Enjoy warm or at room temperature, optionally topped with whipped cream or chocolate.

Notes

These bites can be made ahead of time and stored in an airtight container for up to 4 days. They can also be reheated easily.
