Slow Cooker Lemon Herb Chicken with Fluffy Rice

A comforting and flavorful slow cooker meal featuring tender chicken thighs simmered in a lemon herb sauce, served with fluffy rice.

Ingredients

  • 2 pounds of bone-in, skin-on chicken thighs
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 cup of low-sodium chicken broth
  • 4 tablespoons of fresh lemon juice
  • Zest of 1 lemon
  • 1 tablespoon of dried oregano
  • 2 cloves of minced garlic
  • 1 cup of long-grain white rice

Instructions

  1. Pat the chicken thighs dry with paper towels, then season both sides generously with salt and pepper.
  2. Add the chicken broth, lemon juice, lemon zest, oregano, and garlic to the slow cooker.
  3. Place the seasoned chicken thighs skin-side up in the slow cooker.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken reaches an internal temperature of 165°F (75°C).
  5. Once the chicken is cooked, remove it from the slow cooker and set aside.
  6. Add the rice to the remaining broth in the slow cooker and stir well to combine.
  7. Cover and cook on high for 30-35 minutes until the rice is fluffy.
  8. Serve the chicken atop a bed of fluffy rice, spooning the remaining broth over it.

Notes

For a kid-friendly version, reduce the lemon juice to tone down acidity and shred the chicken to mix with rice.
