Slow Cooker Garlic Butter Beef with Potatoes

A savory and satisfying slow-cooked dish featuring tender beef and creamy Yukon gold potatoes, infused with garlic and butter.

  • 23 lbs beef chuck roast
  • 68 medium-sized Yukon gold potatoes
  • 1 cup unsalted butter
  • 6 cloves garlic, minced
  • 1 onion, sliced
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the chuck roast and cut it into 2–3 inch chunks. Season with salt and pepper.
  2. In the slow cooker, layer the sliced onions at the bottom, followed by the beef chunks.
  3. Sprinkle minced garlic over the beef, then add chopped potatoes around the meat.
  4. Cut unsalted butter into tablespoon-sized pieces and place on top of the potatoes and beef.
  5. Add additional salt and pepper to taste and secure the lid.
  6. Set the slow cooker to low heat for 6–8 hours or high heat for 4–5 hours.
  7. Check for doneness; beef should be fork-tender.
  8. Spoon out the mixture ensuring ample beef, potatoes, and garlic butter sauce in each serving.

Feel free to swap out cuts of beef or potatoes based on preference. Store leftovers in an airtight container for up to 3 days.
