Grandma’s Sicilian Ricotta Almond Cookies

Tender and homey ricotta almond cookies with a delightful crunch from sliced almonds, perfect for any occasion.

  • 1 cup ricotta cheese
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sliced almonds
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the ricotta cheese, egg, and vanilla extract, mixing well.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Fold in the sliced almonds.
  7. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 15 to 20 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on a wire rack and dust with powdered sugar before serving.

Notes

For slightly chewier cookies, reduce baking time by a minute or two.
