Sheet Pan Chicken Pitas with Herby Ranch

A flavorful and easy weeknight dinner featuring seasoned chicken, vibrant bell peppers, and a creamy herby ranch sauce, all stuffed into soft whole wheat pitas.

  • 1.5 lbs Chicken Breasts
  • 1 red Bell Pepper
  • 1 yellow Bell Pepper
  • 1 medium Red Onion
  • 3 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • Salt and Pepper to taste
  • 4 Whole Wheat Pitas
  • 1 cup Herby Ranch Dressing

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the bell peppers and red onion into strips.
  3. In a mixing bowl, combine chicken, olive oil, garlic powder, paprika, salt, and pepper.
  4. Spread the chicken on a baking sheet and scatter the veggies around it.
  5. Roast for 20-25 minutes until chicken reaches 165°F (75°C).
  6. Warm the pitas in a skillet for 1-2 minutes on each side.
  7. Remove from oven, slice chicken, and fill pitas with chicken, veggies, and ranch dressing.

Notes

You can substitute chicken with turkey or chickpeas for a vegetarian option.
