Seafood Casserole with Haddock, Scallops, and Shrimp in Creamy Swiss Cheese Sauce

  • 1 pound haddock fillets, cut into bite-sized pieces
  • 1 pound scallops
  • 1 pound shrimp, peeled and deveined
  • 2 cups Swiss cheese, shredded
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Rinse and pat dry the scallops, shrimp, and haddock. Cut the haddock into bite-sized pieces.
  3. In a medium saucepan, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Stir in heavy cream and 1 cup of Swiss cheese, and heat until melted and smooth.
  5. In a large bowl, toss the haddock, scallops, and shrimp. Pour the cheese sauce over, season with salt and pepper, and mix gently.
  6. Transfer the mixture to a greased 9×13 inch baking dish and top with the remaining Swiss cheese.
  7. Bake for 25-30 minutes or until golden and seafood is cooked through.
  8. Garnish with fresh parsley and serve warm.

Notes

Casseroles often taste even better the next day. Consider letting the flavors meld overnight for enhanced taste.
