Easy Sausage Egg Breakfast Burritos

  • 1 pound breakfast sausage
  • 6 large eggs
  • 1 bell pepper (diced)
  • 1 cup shredded cheese
  • 6 large flour tortillas
  • Salt and pepper to taste
  • Optional toppings: Salsa, avocado, sour cream

Instructions

  1. In a medium-sized skillet over medium heat, crumble and cook the breakfast sausage until browned (about 7–10 minutes).
  2. Add in the diced bell pepper and sauté for an additional 3-4 minutes until tender.
  3. In a mixing bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet and gently stir, cooking for about 5 minutes until the eggs are fluffy and fully cooked.
  4. Sprinkle the shredded cheese over the egg mixture and let it melt for 1–2 minutes.
  5. Remove the mixture from heat. Place about a quarter cup of the mixture in the center of each tortilla, fold in the sides, and roll tightly into a burrito.
  6. For a crispy finish, return the burrito seam-side down to the skillet and cook for an additional 2 minutes on each side, until golden brown.
  7. Slice each burrito in half to showcase the colorful filling and serve warm with your choice of toppings.
