Delightful Sausage Egg Breakfast Roll-Ups

A delicious and easy-to-make breakfast option, these roll-ups combine savory sausage and fluffy scrambled eggs wrapped in a tortilla.

Ingredients

  • 1 lb Breakfast Sausage (pork, turkey, or plant-based)
  • 6 large Eggs
  • 4 Tortillas or Wraps (whole wheat or gluten-free)
  • 1 cup Cheese (optional)
  • Salt and Pepper to taste

Instructions

  1. In a non-stick frying pan over medium heat, cook the sausage links or patties until browned and fully cooked, about 6-8 minutes.
  2. While the sausage cooks, crack the eggs into a bowl, add salt and pepper, then whisk until uniform. Pour into a separate pan over medium heat, stirring gently for about 3-4 minutes until soft.
  3. Once the sausage is done, slice it into bite-sized pieces. Layer scrambled eggs and sausage on a tortilla, sprinkling with cheese if desired.
  4. Fold the sides of the tortilla inward and roll from the bottom to form a tight roll-up.
  5. Optional: Toast the roll-ups in the pan for a minute on each side until golden brown.
  6. Serve warm, cut in half for easy handling, and enjoy!
