Rice Krispie Chocolate Chip Cookies with Soft Chew

Delightful cookies combining the crispy crunch of Rice Krispies with soft, chewy chocolate chip goodness.

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups Rice Krispies
  • 1 to 1.5 cups chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this to the butter and sugar mixture, stirring just until combined.
  5. Fold in the Rice Krispies and chocolate chips until evenly distributed.
  6. Drop rounded spoonfuls of dough onto a lined baking sheet and bake for 10-12 minutes, or until edges are golden.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Can store in an airtight container for up to a week. Chilling the dough can enhance softness.
